So one of my Pinterest adventures turned out to be rather lackluster. I love vegetables, and have been trying to find new ways to prepare them. So when I saw this pin for parmesan roasted green beans, I got excited because I could use local produce (green beans are farmed down in Homestead) and it was something crunchy and new.
And it was a bust. While part of the green beans came out crispy, the majority of them stayed soggy in the middle. The flavor wasn’t terrible, but they were missing the texture that I was looking for. I think this recipe could be better used for more of a dry vegetable to get that crunch that I was looking for.
